For our first WAH Wellness, we’re showing you how to transform your typical Taco Tuesday into a delicious, one-skillet meal! This Tasty Taco Mac One Pot Pasta featured by goodcook® takes just 5 minutes to prep and 15 minutes to cook, making it the perfect busy weeknight dinner.
This dish is sure to be a hit because kids and adults can recognize its familiar flavors. This means that you don’t have to worry about wasting time on a new dish, only to be nervous about whether or not your significant other will like it and frustrated when your kids refuse to eat it.
Do you or does someone in your family have dietary restrictions? Not a problem!
For vegetarians, this recipe can be made meat-free by simply eliminating the sausage crumbles. If following a vegan diet, leave out the cheese and meat or replace with vegan cheese and protein substitutes.
Gluten-free? Simply prep with gluten-free pasta. Speaking of pasta, this tasty, one-skillet meal does not require pasta. If you are following paleo, medium-chop a head of cauliflower and use it in place of the pasta. The cook time for the cauliflower florets will remain the same as the pasta.

- 8 oz uncooked pasta
- 1 (15 oz) can black beans
- 1 (15 oz) can corn
- 6 oz cooked beef or sausage crumbles
- ¾ cup diced green onion
- 1 (16 oz) jar salsa
- 1 packet taco seasoning
- 2 cups chicken, beef or veggie broth
- 1 cup shredded cheddar cheese
- 1 avocado, diced
- ½ cup finely chopped cilantro
In an 11-inch sauté pan, combine pasta, black beans, corn, sausage crumbles, green onion, salsa, taco seasoning, and broth. Then, over medium heat, cover and bring to a boil. Cook for 12-15 minutes, stirring regularly. Remove from heat and top with cheese, cilantro, and avocado. Bon appétit!
